The Solstice Potato soup is slightly alkalizing to the body, keeping the body healthy and light, and the mind clear for sadhana. This is delicious comfort food on a cold, winter’s night. Top a hot, steaming bowl of chili with grated cheese, a dollop of sour cream, and chopped red onions! Add a large handful of Tortilla Chips or a few slices of skillet cornbread. Get comfy on the couch and find the remote! Ahhhhhhh!
I have found that it works great to make the “filling” up a head of time. Just prep and put in the refrigerator until needed. This is one of our favorite meals.
- Pour in 6 cans broth and wine. Increase heat and bring to a boil.
- Dissolve flour in remaining 1 can broth.
- Stir into boiling soup.
- Reduce heat and simmer slowly for 2 hours.
- Adjust color to a rich brown with caramel coloring, season with salt. Refrigerate overnight. To serve, heat soup in microwave or on stove top.
- If desired, pour into ovenproof crocks or bowls.
- Top with a slice of bread and a sprinkling of grated cheese. Heat under the broiler until cheese melts and bubbles, about 5 minutes.
- Leftover soup can be frozen.
